The best pork roasting joint. Pre heat the oven to 200c. Place pork joint in for 10 minutes then drop temperature down to 180c. Probe centre to 77c once reached let rest for 10 mins. Take off crackling and place back in then oven for a few minutes at 200c to crisp up.
