Elevate your home-baked family dinners with Potts’ Mexican Enchilada and Mole Sauce, a superb artisan addition to the Eric Lyons deli range. Reimagining the traditional Mexican “Mole” (Moe-Lay)—a celebrated, deeply comforting sauce served over meats much like a rich gravy—this recipe blends vine-ripened tomatoes and purée with premium sunflower oil. Infused with warming spices, aromatic oregano, sweet orange zest, and a subtle, smoky kick of real chipotle chillies, it offers an incredible depth of flavour without any artificial additives. It serves as a magnificent, velvety blanket when poured over rolled tortillas stuffed with our diced chicken or turkey, then topped generously with cheese and baked until bubbling. A highly convenient, restaurant-grade shortcut that honors authentic culinary heritage.
Cooking Tips
Pan-fry 400g of our master-butchered chicken, turkey, or pork until thoroughly cooked and golden. Pour over the 330g of Enchilada sauce and simmer gently until piping hot throughout. Alternatively, arrange stuffed tortillas in a dish, cover with the sauce and grated cheese, and bake at 180°C for 15–20 minutes. Store in cool, ambient conditions. Once opened, keep refrigerated and consume within 3 days.
