Christmas Fettucine

This delicious Christmas Fettucine is sure to please the whole family this Christmas! I like to make this on Boxing day using up leftover sprouts and even the leftover bacon from the top of my turkey! But you can absolutely buy all the fresh ingredients and make this any day of the year! I also made my own pasta which you can do too or can buy ready made!

Shopping list

  • 400g of Fettuccine or Tagliatelle

  • 1 Red Onion

  • 1 tbsp of Olive oil

  • 4 Cloves of Garlic

  • 300g of smoked bacon, bacon lardons or cooked ham

  • 300g of shredded sprouts

  • 150ml of dry white wine

  • 100ml of double cream

  • 50g of grated parmesan

  • Large handful of fresh basil and parsley

Method

Finely dice a red onion and finely chop your Brussel sprouts into shredded pieces and place in a pan with a good glug of olive oil and a pinch of salt. Gently fry to soften but not colour.

Meanwhile, cook the fettuccine pasta in well salted boiling water for 2 minutes.

Add the bacon/pancetta/ham to the onions and cook until fat renders out.

Cook for a few minutes and add in your glass of dry white wine. Stir in to get all the flavour off the bottom of the pan.

Add the double cream into the pan and mix in with the contents inside.

Add in the cooked pasta and mix in well with the contents of the pan.

Turn off the hob and add in your fresh basil and parsley leaves.

Serve into large, warm bowls and grate parmesan over each dish and add some black pepper.
