Method
Prep & Dry: Wash the baby potatoes thoroughly under cold running water to remove any dirt. Dry them completely with a clean tea towel.
Chef's Tip: Ensuring the potatoes are completely dry before cutting and oiling is essential for maximum crispiness! If you choose to par-cook/microwave your potatoes prior to roasting, do not add salt at this stage, as salt extracts moisture and prevents crisping.
Slice: Cut the baby potatoes into 6 equal-sized wedges so they cook evenly.
Oil & Season: Place the sliced potatoes into a large mixing bowl (mixing in a separate bowl ensures an even coating). Add the olive oil, garlic granules, and black pepper. Toss well until every piece is evenly coated.
Preheat & Arrange: Preheat your oven to 270°C (250°C Fan / Gas Mark 9). Line a baking tray with baking parchment paper. Spread the seasoned potatoes in a single layer, ensuring they aren't overcrowded.
First Roast: Roast in the center of the oven for 20 minutes.
Turn & Finish: Remove the tray, flip the potatoes with a spatula to ensure even browning, and return to the oven for another 20 minutes until golden brown and crispy on the edges.
Season & Serve: Remove from the oven, transfer to a serving dish, and season generously with salt to taste while hot. Serve immediately.
