Use up your leftover turkey in this mexican-inspired recipe for something a little different at Christmas! A quick and easy recipe that is a great option if you're hosting a crowd on Boxing Day!
Shopping list
- 60ml vegetable oil
- 2 white onions, thinly sliced
- 3 garlic cloves, finely chopped
- 2 Tinned Tomatoes blended beforehand so smooth
- 2 tablespoons salt
- 2 tablespoons of chipotle paste
- 1 tablespoon of allspice
- 1 teaspoon freshly ground black pepper
- 6 fresh bay leaves
- 800g of cooked and shredded turkey
- 240ml chicken stock or water
To serve: Taco wraps, Grated cheese, Sour Cream and/or Guacamole
Method
Heat the oil in a saucepan over a medium-high heat.
Add the onions and cook for 5 minutes, or until they become translucent.
Add the garlic and cook for about 2 minutes or until they start to take on some colour.
Add the blended tinned tomatoes, salt, chipotle paste, allspice, black pepper and bay leaves.
Cook for about 5 minutes, stirring every couple of minutes, then lower the heat and add the shredded turkey and stock or water.
Cook for another 10 minutes. Taste and add more salt if needed and then simmer for a further 10 minutes.
Serve the stewed turkey on top of taco wraps with fresh cheese, sour cream and guacamole.
