Beef Burrito Bowl

A hearty, healthy meal that can be enjoyed by all the family.

This recipe sees our lean steak mince infused with the flavours of garlic, cumin and Worcestershire sauce, and then layered on top of fluffy white rice and crispy tortillas.

 250 g Beef mince
 100 g Basmati rice
 1 Tin of sweetcorn
 1 Red chilli
 1 Avocado, sliced
 4 Tortillas
 2 tbsp Greek yoghurt
 1 Brown onion, finely chopped
 25 g Fresh coriander
 1 tsp Worcestershire sauce
 1 tsp Ground cumin
 1 Garlic, crushed
 1 tbsp Olive oil
 Salt and pepper, to taste

Preheat the oven to 210C.

Brush the tortillas with oil and gently fold them into a bowl shape. Then, bake for 8-10 minutes until crisp.

Cook the rice for 15-20 minutes until fluffy.

While the rice is cooking, heat a frying pan with oil and then sauté the onion, before adding the mince beef and cooking for 8-10 minutes until brown.

Add the garlic, cumin and Worcestershire sauce and simmer on a low heat.

Layer the tortilla bowls with the cooked rice, beef mixture, corn, chillis and sliced avocados.

Spoon over the Greek yoghurt and garnish with salt, pepper and coriander.
