Sometimes cooking can be a chore. Whether your in a lazy mood, hungover or have a busy day ahead, this roast is perfect for all those occasions.

Minimum washing up, quick preparation and cheap ingredients.

Easy like a Sunday morning.

 1 1.6KG+ Whole Chicken (Free range if possible)
 4 Carrots
 4 Parsnips
 4 Roasting Potatoes
 4 Red onions
 1 Large Broccoli
 1 Lemon
 4 Portion of Gravy
Preparation

Peel and prep veg. (Pre-heat oven to 180c)

Place veg on the bottom of a big roasting tray. (Apart from broccoli)

Lightly oil & season veg.

Lightly oil & season chicken.

Place chicken on top of veg. Squeeze lemon over the top and slide in remaining lemon to chicken carcass.

Slide into oven for 10 mins at 180c

Once 10 mins has passed decrease temperature to 160c. Cook for 1 hour & 20 minutes.

Take out Chicken and rest.

Mix all the veg in juices from the pan and add broccoli.

Cook veg for a further 20 mins at 180c to crisp up.

Make your gravy.

Carve Chicken, Plate up veg and pour over your gravy for a super simple but delicious Sunday roast. Don't forget the white wine!
