Leave to settle for at least an hour at room temperature.
Pre-heat oven to 190C or gas mark 5.
Loosely cover with aluminium foil.
Roast the turkey for the calculated time, occasionally basting with the pan juices.
20 mins before the end remove the foil and continue to cook until the bacon becomes crisp.
Ensure that the centre of the joint is piping hot (75C) and that the juices run clear.
Allow to rest for 15 mins before carving.
