A fun take on BBQ chicken that involves grilling one of our delicious whole chickens using a partially-filled can of beer.
The result is delicious, fall-off-the-bone meat, covered in crispy skin.
Shopping list
- 1 whole chicken
- 1 can of beer
- 1 ½ tsp sea salt
- 1 ½ tsp pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ⅛ tsp chipotle chilli powder
- 2 tbsp unsalted butter, at room temperature
- 3 tbsp olive oil
- 2 limes
- Meat temperature probe
Method
Open the can of beer and pour around ¼ of it into a metal baking dish. Then, place the can in the centre of the dish.
Combine the salt, pepper, paprika, garlic powder, onion powder and chilli powder in a mixing bowl.
In another bowl, add the butter along with a few pinches of the spice mix and then stir together until smooth.
Rub the butter over the breasts and thighs of the chicken underneath the skin.
Slice one of the limes into small slices and then place these underneath the skin.
Place the whole chicken on top of the can by inserting the can into the chicken's cavity. Rub olive oil over the chicken and then coat with the remaining spice mix.
Place the baking dish on a preheated BBQ grill and cook for 1 hour and 25 minutes. The centre of the chicken needs to be around 77°C for safe eating — you can check this using one of our MEATER+ wireless temperature probes.
Remove the dish and the let the chicken rest for around 20 minutes. Throw away the can and serve with your choice of sides.
