Whilst Turkey is the centrepiece of a Christmas dinner, there are bound to be leftovers. However, thinking about creative ways in which you can use the leftovers can quickly become a challenge. With several skilled chefs at Eric Lyons, we’ve mastered the art of making the most out of every ingredient.
Here’s a list of our favourite ways to use Turkey leftovers, as well as tips on storing the bird.
How long does leftover turkey last?
The Food standards agency states it should be refrigerated (within two hours of cooking), and eaten within two days.
How to store leftover turkey?
- Cool it quickly
After cooking, allow the turkey to cool slightly at room temperature (no more than 2 hours), then transfer it to the fridge. Leaving it out too long can let harmful bacteria grow. - Use airtight containers
Store the turkey in airtight containers or tightly wrapped in foil or cling film to prevent it from drying out and absorbing other flavours. - Refrigerate promptly
Place the turkey in the fridge at or below 5°C. Eat within 48 hours for the safest quality.
Can you freeze leftover turkey?
Yes, you can freeze leftover turkey if you want to keep it longer. If you are wondering “how to freeze leftover turkey” follow these steps:
- Cool the food first
- Store in airtight containers or freezer bags
- Label and date it
Once you are ready to consume, defrost in the fridge, not on the countertop, to keep the turkey at a safe temperature. Smaller portions defrost more quickly and reduce the risk of bacterial growth.
Note: For cooked meats like turkey, the FSA say that while frozen food is “safe for a long time,” quality may decline after 2–3 months.
How to reheat turkey leftovers?
- Reheat thoroughly
Turkey should be reheated until steaming hot all the way through (at least 75°C in the centre). This kills any bacteria that may have grown while it was stored. - Use appropriate methods
- Oven: Preheat to 160–180°C, cover the turkey to prevent drying, and heat until piping hot.
- Microwave: Cut the turkey into smaller pieces for even heating, cover loosely, and stir or rotate if possible to avoid cold spots.
- Stove: Heat shredded turkey in a pan with a little stock or sauce over medium heat until thoroughly hot.
- Reheat only once
The FSA advises that cooked meat should only be reheated once. Repeated heating increases the risk of bacteria multiplying and reduces the quality of the meat. - Serve immediately
After reheating, eat the turkey right away. Do not leave it to stand at room temperature for long periods.
