Shopping list
- 2 Pork Steaks
- 2 large red or yellow peppers
For the Mash:
- 500g potatoes (Maris Piper or King Edward)
- 4 Spring Onions
- 30g butter
- 50ml cream or milk
For the Creamed Leeks:
- 2 leeks
- 30g butter
- 100ml double cream

Method
Peel & Steam the Potatoes (30 minutes)

Peel your potatoes.

Place them in a steamer basket over boiling water and steam for 30 minutes or until tender.
Why steam instead of boil?
Steaming keeps the potatoes drier, preventing them from becoming waterlogged. This gives your mash a fluffier texture and allows it to absorb butter, cream, and seasoning more effectively.

Prepare the Peppers & Pork (30 minutes at 180°C)

While the potatoes steam, cut the peppers in half lengthways and remove the seeds.
