1 Double Double Burger Ingredients
- 2 beef smash burger patties from Eric Lyons
- 2 slices American-style cheese
- 1 soft burger bun (brioche works well)
- 1 slice tomato of a large tomato
- A leaf of baby gem lettuce
- 1 tbsp butter
Animal-Style Fries
Ingredients (2 portions)
- 400g frozen straight-cut chips or make your own
- 1 medium onion, finely diced
- 1 tbsp butter
- 1 tsp sugar
- 4 slices American-style cheese
- 4 tbsp of Animal Burger Sauce (see above recipe to make the burger sauce)
“Animal Style” Burger Sauce
Ingredients
- 3 tbsp mayonnaise
- 1 tbsp ketchup
- 1 tbsp finely chopped pickles (gherkin works perfectly in the UK)
- 1 tsp American mustard
- 1 tsp white vinegar
- ¼ tsp garlic powder
- ¼ tsp freshly ground black pepper
Method
Make the sauce: In a small bowl, mix all sauce ingredients until smooth.
Set aside for 10–15 minutes if you can (even while cooking everything else).
Cook the patties:
- Heat a frying pan or griddle on high.
- Cook 1 side of the pattie for ~2–3 minutes. Whilst that is cooking squeeze American mustard on the raw side and spread around to cover the patty.
- Once the first side of the patty is cooked flip over to cook the mustard covered side for 2 to 3 minutes.
- Add a slice of cheese to each patty in the last minute.
Toast the bun: Butter the cut sides and toast in the pan until golden.
Assemble:
- Bottom bun → sauce → first patty → tomato → lettuce
- Add second patty → more sauce → top bun
Cook the chips: Cook in the oven or air fryer according to packet instructions until golden and crispy.
Caramelise the onions:
- Heat a frying pan on medium-low heat
- Add 1 tbsp butter and let it melt
- Add the diced onion and cook gently for about 5 minutes
- Stir in 1 tsp sugar
- Continue cooking for 10–15 minutes, stirring occasionally
You’re aiming for:
- Soft texture
- Deep golden colour
- Slightly sticky, jammy finish
- (If they start catching, add a tiny splash of water and keep going.)
Assemble the fries:
- Put hot chips on a plate or tray
- Lay cheese slices over the top (they should melt from the heat)
- Spoon over the caramelised onions
- Drizzle generously with burger sauce
