The skewers are beautifully glazed in a traditional, oil-based Jamaican jerk marinade featuring a warm, aromatic blend of chilli, allspice, jalapeño, spring onion, and a touch of thyme. As they hit the heat, the natural cane sugars in the marinade and the pineapple caramelise exquisitely, locking in juices while creating a stunning charred finish. 

Cooking Tips

BBQ: Cook over medium-hot coals for 12–15 minutes, turning regularly to achieve a beautifully smoky, sweet caramelisation on the pineapple and pork.
Grill: Place under a pre-heated medium grill for 14–16 minutes, turning occasionally until the pork is cooked through and tender.
Pan-Fry / Griddle: Sear in a hot griddle pan over a medium heat for 12–14 minutes, allowing the marinade's natural oils to perfectly crisp the edges.
Serving Suggestion: Serve over a bed of fluffy coconut rice, or tucked inside a warm flatbread with a drizzle of fresh lime juice.
