Roast Turkey Breast wrapped in Bacon

I'm back with another recipe! And with Christmas approaching, how could I not give the the Eric Lyons Turkey Breast wrapped in Bacon! The expertly latticed bacon moistens the turkey breast whilst adding a subtle smoky flavour, taking this Christmas dinner to the next level. An absolute classic for Christmas Day, which also provided me with lots of leftover turkey for some yummy recipes coming soon!

Method

Preheat your oven to 170°C (fan). Place your turkey breast wrapped in bacon on a roasting tray, cover with foil and roast in the oven for approximately 2 hours. Make sure to remove the foil for the last 20 minutes of cooking to crisp up the bacon!

To ensure your turkey is fully cooked, use a meat thermometer to check that the thickest part of the turkey is 77°C. Leave to rest under loose foil for 15 minutes before carving.

Whilst your turkey is cooking, make your sides! I went with roast potatoes, roast carrots & parsnips, brussel sprouts, pigs in blankets and gravy! Note, I did cheat and bought the Eric Lyons Turkey Gravy because it sounded so delicious and saved me the hassle! (I definitely recommend this!)

For the pigs in blankets, these come in a handy foil tray already so I simply popped these in the oven for 30 minutes until crispy and cooked through!

I then simply reheated the turkey gravy on the hob for approximately 5-10 minutes.

Once everything was ready and the turkey had rested, I carved it into slices and served with the roast potatoes, roast carrots & parsnips, brussel sprouts, pigs in blankets and a good lashing of turkey gravy! Absolutely delicious!
